Papua New Guinea — Elimbari
Coming from the more elevated Chimbu (Simbu) region in Papua New Guinea, the Elimbari A comes from coffee trees that grow very slowly and consequently produce a much denser bean. Grown in extremely rich volcanic soils, it is hand harvested and hand sorted. The Elimbari A is considered a ‘cordial’ by exporters, who generally use it in blending to elevate the overall quality of their coffee. A combination of the incredibly fertile growing conditions, careful sorting and processing and the fact that Elimbari A is a strain of coffee derivative of the famous Blue Mountain Arabica means this is great coffee.
After the purely ripe coffee ‘cherries’ have been selected, the harvested coffee is brought to a central mill and pulped the same afternoon. During pulping, all visible floaters and other defects are thoroughly removed. The coffee is left to ferment for at least 36 hours and thoroughly washed in washing boxes. Then the clean coffee is transferred to raised screen beds for mucilage drying. Once dried sufficiently, the coffee is further transferred to specially built drying beds and sun-dried.
