For most serious coffee enthusiasts, chasing that elusive ‘god shot’ has always been equal parts inspiration and frustration. There are so many interconnecting variables that it’s hard to know exactly what is influencing what we taste and when we produce something outstanding, how the hell do we replicate it?
Is it a good shot from a bad roast of a good crop on a jaded palate? Or is it a bad shot from a great roast from an old crop on a clean palate? You get what I’m saying …
There is, however, some good news. Thanks to Synesso’s Mark Barnett and Sandy Schneiter (and their understanding bank manager) it’s now possible to rule out at least one of the variables. No one says it better than the man largely responsible for the initial push to pursue greater thermal stability, David Schomer. As Mr Schomer says “For me, the creation of this machine marks the beginning of caffe espresso as a culinary art… Espresso is out of its prison of engineered mediocrity”.
It’s no surprise that wherever you find people pursuing excellence in espresso coffee you’ll find a shining Synesso not far away.
